How To Make Healthy Chips

Fancy a healthy alternative to potato chips? Then hail the courgette chip! Dead easy to make and tasty too.

INGREDIENTS:
2 courgettes
100g ground almonds
2 eggs
75g grated parmesan
Pepper
Salt
1 tbsp rosemary
1 tbsp oregano

METHOD
1. Preheat oven to 200C. Slice the courgettes into chips.

2. On a large plate mix together the almonds, parmesan and the herbs. Season with salt and pepper. In a bowl whisk together the eggs.

3. Dip each courgette chip into the beaten eggs and then into the almond mix, making sure they get a good coating on both sides.

4. Lay on baking tray and bake at for 25-30 mins until gold and crispy.
