How To Make Pizza Pancakes: Cooking For Kids

Get the kids helping out in the kitchen with this alternative pizza recipe. Fiona Faulkner shows you how to rustle up her lighter version of the traditional pizza, including a simple homemade tomato sauce. Get your kids to decorate the pizzas with their favourite toppings.

Ingredients:

120 g plain flour
pinch of salt
1 egg
250 ml semi-skimmed milk
1 tbsp melted butter, slightly cooled
vegetable oil
2 tbsp olive oil
1 onion, chopped
1 clove garlic, crushed
1 ton chopped tomatoes
1 tsp dried Italian herbs
2 tbsp tomato puree
1/2 tsp sugar
pepper
180 g reduced fat mature cheddar cheese, grated
150 g pineapple chunks
100 g black olives, pitted and chopped
100 g sweetcorn, from a tin
fresh basil to garnish

Step 1: Make The Pancakes
Preheat the oven to 210° c. Melt 1 tbsp of butter in a saucepan and then leave to cool slightly. In a large bowl mix together your flour, salt, 1 egg and half of the milk. Whisk together to form a batter. Add the rest of the milk and stir through. Decant your mixture into a measuring jug and stir through the melted butter. For the best results leave the mixture in the fridge for 30 minutes.

Step 2: Fry Your Pancakes
Add some vegetable oil into your frying pan and leave until it begins to smoke. Pour in a 1-2 ladle-fulls of the mixture and swirl around to cover the bottom of the pan. Turn the heat down slightly and leave the pancake to cook for 1-2 minutes. Flip the pancake and cook on the other side for another minute until brown. Remove from the pan once cooked. Continue until you have 6 pancakes.

Step 3: Make The Sauce
Heat 2 tbsp of olive oil in a large saucepan and add the onion and the garlic. Sauté for a couple of minutes until the onion begins to soften. Add the tomatoes, 1 tsp of dried Italian herbs, half a tsp of salt and a sprinkle of pepper to the pan, along with 1 tsp of sugar, a grated carrot and 2 tbsp of tomato purée. Give all the ingredients a stir and then leave to simmer for 5-6 minutes. Transfer the mixture to a food processor and blend until smooth.

Step 4: Make Your Pizzas
Add a few spoonfuls of the sauce onto each pancake and smooth over. Add some grated cheese and then sprinkle over your toppings of choice. Cook each pancake for 5 minutes until the cheese begins to bubble. Season with black pepper and garnish with some fresh basil.
