How To Make A Vegetarian Calzone

Here’s how to make a vegetable calzone, by My Virgin Kitchen’s Barry Lewis.

INGREDIENTS:
1/2 onion, diced
1/2 green pepper, finely chopped
200g mushrooms, finely sliced
2 tbsp tomato puree
1 tin plum tomatoes
Salt and pepper
1 tsp dry Italian herbs
100g shredded mozzarella
100g grated Cheddar
50g grated Parmesan
2 frozen ready-made pizza dough
1 egg, beaten

Cook = 20m
Total = 40m
Temp = 180° c – 360° f

STEP 1: MAKE THE FILLING
Heat some oil a large pan and add the onion, pepper and mushrooms. Leave on a medium heat to soften for about five minutes. Then stir in the tomato puree and plum tomatoes, and season with salt, pepper and Italian herbs. Then leave on the heat for another five minutes, stirring occasionally.

STEP 2: CHEESE
Mix together the mozzarella, Cheddar and parmesan cheese. Then mix in the vegetable filling and leave to one side.

STEP 3: PASTRY
Roll and stretch out one pizza dough into a large round. Then place half of the vegetable filling in the middle of the dough. Fold the dough over, fold in and crimp the sides together. Repeat to make a second calzone.

STEP 4: BAKE
Coat the calzones in the egg wash and pierce in a few places with a fork. Then slide them onto a baking tray and bake in the oven for 15-20 minutes until golden brown.
