Bacon Mac & Cheese Bowls Recipe

INGREDIENTS:
50 g Macaroni Cheese
40 g Butter
40 g Plain Flour
600 ml Whole Milk
1 Garlic Clove
1 tbsp English Mustard Powder
280 g Cheddar Cheese
35 g Parmesan Cheese
100 g Sun Blushed Tomatoes
20-24 Streaky Bacon Rashers
Fresh Spinach To Serve

STEP 1: WHITE SAUCE
Preheat the oven to 190C. Boil the macaroni for 2 mins less than stated on the pack. Meanwhile, melt the butter in a saucepan. Add the garlic and mustard, cook for 1 min, then stir in the flour. Cook for 1 min more, then gradually whisk in the milk until you have a lump-free sauce. Simmer for 5 mins, whisking constantly until thickened.

STEP 2: STIR IN CHEESE AND MIX IN PASTA
Take off the heat, then stir in 250g of cheddar and 35g of Parmesan. Drain the pasta and mix it through the cheese sauce. Season with salt and pepper and transfer to a heatproof dish and sprinkle over the remaining cheddar. Place in the oven for 25-30 mins until the cheese on top is starting to brown.

STEP 3: MAKE BACON BOWLS
On a lined baking tray weave together your bacon, making sure there are no gaps. Place in the oven and cook for 15-20 minutes. Remove from the oven and pat with some kitchen towel to remove some of the excess fat. Place the bowl you want to serve the dish in (making sure it’s heat proof) upside down on top of the bacon and cut around it. Then place the bacon into the dish, or a separate heat proof bowl and bake for a further 10-15 minutes.

STEP 4: FINISH AND SERVE
Remove the bacon bowl from the oven and add a handful of spinach leaves on top. Spoon in the baked macaroni cheese and top with a few of the sun blushed tomatoes.
