Mac And Cheese New Yorkshire Puddings

Here’s how to make Yorkshire puddings (or popovers if you’re in the US) filled with mac n cheese, Philly cheese steak and a touch of beer. We’re calling these New-York-Shire Puddings (see what we did there?) Food porn at its best.

INGREDIENTS:

FOR THE YORKSHIRE PUDDINGS
140 g Plain flour
4 Eggs
200 ml Milk
Sunflower oil (for cooking)
200 g Sandwich steak / frying steak

FOR PHILLY CHEESE STEAK FILLING:
200 g Sandwich steak / frying steak
1 Half onion finely chopped
1 Green pepper, finely chopped
25 g Plain flour
25 g Butter
500 ml Milk
150 g Grated cheddar
25 g Paremesan

FOR MAC AND CHEESE FILLING
25 g Plain flour
25 g Butter500 ml Milk
250 g Grated Red Leicester
200 g Macaroni
3 Strips streaky bacon
FOR THE COLD FILLING
6 Pastrami slices
100 ml Honey mustard dresssing

METHOD:

STEP 1
Preheat oven to 220c.

STEP 2
(For the Yorkshire puddings) To make the batter, tip 140g plain flour into a bowl and beat in four eggs until smooth.

STEP 3
Gradually add 200ml milk and carry on beating until the mix is completely lump-free. Season with salt and pepper.

STEP 4
Drizzle a little sunflower oil evenly into Yorkshire pudding tins.

STEP 5
Pour the batter into a jug, then remove the hot tins from the oven. Carefully and evenly pour the batter into the holes. Place the tins back in the oven and leave for 20-25 mins until the puddings have puffed up and browned.
To make the fillings:

STEP 6
(For the Philly cheese steak) Slice steak into thin strips and add to frying pan and simmer down. Add Parmesan cheese and season with salt and pepper.

STEP 7
Melt butter in a pan, stir in flour and cook for 1-2 minutes until you form a roux.

STEP 8
Take pan off the heat and gradually stir in the milk to get a smooth sauce, return to heat and bring to boil. Then simmer for 8-10 minutes.

STEP 9
Stir in cheese and allow to melt.
For The Mac & Cheese with Bacon:

STEP 10
Follow the instructions for the white cheese sauce, but this time add the Red Leicester.

STEP 11
Bring macaroni to boil and then add to the cheese sauce.

STEP 12
Fry bacon in pan until crispy. Then chop finely.

STEP 13
Take your Yorkshires out and press the middle part of the Yorkshire.

STEP 14
Fill your Yorkshires, top the Philly cheese steaks with the any excess cheese sauce, add pastrami to cold options and cover in Honey mustard dressing.
