6 Good Quality Sausages
3-4 Medium Sweet Potatoes
2 tbsp Chicken Stock
1 Leek, Thinly Sliced
2 Spring Onions
Handful of Mushrooms
Large Handful of Crumbled Feta Cheese
STEP 1: PREPARE SWEET POTATOES
Peel and slice 3-4 small sweet potatoes and place in microwave for 6-8 mins, until soft. Mash until smooth.
STEP 2: COOK VEGETABLES
Melt a tsp of coconut oil in a frying pan. Add the leek, spring onion, red onion, pepper and mushrooms to the pan and cook for 2-3 minutes.
STEP 3: SAUSAGE AND STOCK
Remove the sausages from their skins and fry in the pan until starting to brown. Pour over the chicken stock and leave to simmer for 6-8 minutes. Season with salt and pepper.
STEP 4: COOK, FINISH AND SERVE
Once cooked pour your sausage mixture into a casserole dish. Top with the mashed sweet potato, making sure you cover all of the filling. Crumble over a large handful of feta cheese and place under the grill for 3-4 minutes until the sweet potato is starting to brown and the feta has melted.
