Peanut Butter Chicken Noodles | Joe Wicks, The Body Coach

The Body Coach Joe Wicks is back with another recipe from his Get Lean series and here he shows you how to make delicious and healthy peanut butter chicken noodles.

INGREDIENTS:
2 Chicken Breasts
1 tsp Coconut Oil
1 Small Red Onion
1 tbsp Soy Sauce
1 Pepper
1/2 Courgette
Handful of Baby Corn
2-3 tbsp Peanut Butter
200 g Rice Noodles

STEP 1: FRY VEGETABLES AND CHICKEN
Melt a tsp of coconut oil in a hot wok. Add in the onions and fry for a couple of minutes. Next add in your chicken and cook for 5-6 minutes. Throw in your courgette, pepper and baby corn and give all the ingredients a good toss in the pan.

STEP 2: NOODLES
Add in the noodles and cook for 2 minutes.

STEP 3: ADD PEANUT BUTTER AND SERVE
Place your peanut butter in a bowl and loosen with a splash of warm water. Add in you soy sauce and mix and then pour the mixture into the pan. Give everything a good mix to make sure the sauce coats all the chicken, veg and noodles. Serve.
