Pear Crumble Pots With Chocolate And Raspberries Recipe

Here’s how to make pear crumble pots with chocolate chips and raspberries. These are far too moreish!

INGREDIENTS:
700 g Slightly Ripe Pears
250 g Fresh Raspberries
100 g Caster Sugar
Juice From Half A Lemon
120 ml Water
100 g Self Raising Flour
100 g Demerara Sugar
75 g Butter Diced
25 g Chocolate Chips
30 g Oats

STEP 1: COOK PEARS
Preheat the oven to 180C/gas mark 4. Put the pears into a saucepan with the sugar, water and lemon juice and heat gently. Simmer for about 20 minutes, until the pears are soft. You can add more water if the pan starts to appear dry at any point. Add the raspberries and leave to simmer for a further 5 minutes.

STEP 2: MAKE THE TOPPING
While the fruit is simmering away, place the flour, sugar and butter into a bowl. Using your fingertips rub the butter into the flour and sugar until you have a fine breadcrumb-like consistency. Add the chocolate chips and oats and use your hands or a spoon to combine.

STEP 3: BAKE AND FINISH
Spoon the mixture into your ramekins and cover with the oaty topping. Cook in the oven for 20-25 mins until the fruit if bubbling and the top is golden brown. Serve with ice cream or custard.
