One Pot Pasta

We show you how to make a delicious, quick and easy one pot pasta dish that saves you heaps of time in washing up.

INGREDIENTS:
150g Spaghetti
200g Chopped Cherry Tomatoes
1/2 An Onion thinly sliced
2 Cloves of Garlic
2 or 3 Sprigs of Basil
1 tsp Dried Oregano
1 tsp Dried Thyme
2 tbsp Capers
Chopped Sprinkle of Chilli Flakes
Salt and Pepper
2 Cups of warm Chicken Stock
10 Black Olives chopped in half
1 Large handful of grated Parmesan
5-6 Anchovie Fillets

STEP 1: ADD ALL INGREDIENTS TO A LARGE POT
Add the onion, garlic, chilli flakes, oregano, thyme, chopped tomatoes, basil, chopped capers, chopped anchovies and halved olives into a large sauce pan. Add the spaghetti, breaking it in half in needs be to fit your pan. Pour in the stock and olive oil and season with salt and pepper.

STEP 2: BRING TO THE BOIL AND STIR
Bring the stock to a boil over high heat and then reduce the heat to a medium and keep the pan at a steady simmer. Cook until the pasta is al dente and water has nearly evaporated, about 10 minutes, stirring and tossing the ingredients frequently.

STEP 3: FINISH AND SERVE
Take the pan off the heat and stir through the parmesan. Serve in bowls with some basil and extra parmesan.
