Simple Tikka Masala: Food Fest S02E1/8


Is there anything better than a homemade curry with a lovely hot naan bread? I think not! In this episode of Food Fest Jonny shows you how to make the classic Anglo-Indian chicken tikka masala.

2 chicken breasts
5cm piece of ginger, peeled and sliced
2 tsp turmeric
2 tsp ground cumin
2 tsp garam masala
1/2 onion, sliced
2 cloves of garlic, chopped
3 cardamom pods
2 tomatoes
3-4 tbsp tomato puree
120 ml yoghurt
1/2 lemon

Step 1: Marinate The Chicken

Cut up the chicken breasts into chunks and place them in a bowl. Add sliced chilli and ginger, half the turmeric, the cumin and the garam masala, salt and pepper and mix well. Cover the bowl with cling film and place in the fridge for 30 minutes.

Step 2: Make The Sauce

Heat some oil in a pan and add the garlic and onion. Cook for a minute or two, then add the rest of the turmeric and the cardamom pods and stir again. Chop up the tomatoes and add them to the onions, then add the tomato puree and mix well.

Step 3: Add The Chicken

Add the chicken and the marinade to the onions and tomatoes along with the yoghurt. Mix well. Add a little more salt and pepper to taste and a squeeze of lemon juice and cook for about 5 minutes until the chicken is cooked all the way through. Serve with a sprinkle of fresh coriander, basmati rice and some naan bread.
