Strawberry Biscuit Bites Recipe

These strawberry biscuit bites are delicious, any time of the year. Here’s how to make them.

INGREDIENTS:
280 g Plain Flour
3 1/2 tbsp Caster Sugar
1 tbsp Baking Powder
100 g Chilled Butter
220 ml Buttermilk
Pinch of Salt
1 tbsp Demerara Sugar
200 g Strawberries
Few Drops of Balsamic Vinegar
200 ml Double Cream

STEP 1: MAKE DOUGH
Preheat your oven the 200C. In a large bowl, combine flour, 3 tbsp sugar, the baking powder, soda and salt. Cut in the cold cubed butter until the mixture resembles coarse breadcrumbs. Gradually stir in the buttermilk until a soft dough forms. Don’t overwork the dough too much.

STEP 2: COOK BISCUITS
Spoon the dough into 6 mounds on a greased baking tray, leaving space between them. Sprinkle Demerara sugar over the top of each mound and then bake for around 15 minutes or until lightly browned. Leave to cool on a wire rack.

STEP 3: PREPARE FILLING
While the biscuits are cooling, chop up 170g strawberries into small pieces and add to a bowl. Stir through ½ tbsp. of caster sugar and a few drops of balsamic vinegar. Crush the strawberries gently with the back of a fork. Put to one side. Use an electric or hand whisk to beat the double cream until it starts to form peaks. Slice the remaining strawberries into half or quarters depending on their size.

STEP 4: ASSEMBLE AND ENJOY
Once the shortcakes are cooled, slice in half horizontally. Place the bottom halves on serving plates and top a layer of the cream, then spoon over the strawberry mixture and a few halved strawberries. Sandwich on the top halves and top with some more cream and a strawberries half.
