Sesame Prawn Toast

With Chinese New Year only a few days away, we show you how to make sesame prawn toast, a takeaway classic. No more waiting for the delivery guy to indulge in this tasty snack.

INGREDIENTS:
A Bag of Prawns
1 Egg
Slightly Stale Bread
Sesame Seeds
Salt and White Pepper
Cooking Oil
Hoisin Mixed With honey
Coriander

STEP 1: PRAWNS
Put the prawns into a mixer with the salt and white pepper and mix into a paste.

STEP 2: ADD EGG
Remove mixture from mixer and slowly add a beaten egg, you want to add enough to bind the mixture together but not make it watery. Then put mixture in fridge for 1/2 an hr to let it stick together.

STEP 3: BREAD
Remove crusts from the bread and spread the prawn paste on top of remaining square of bread. Then put sesame seeds on a plate and press the bread down into the seeds, prawn side down.

STEP 4: COOK TOAST
Put prawned bread, prawn side up, in fridge for 10 minutes. Heat enough oil so it will cover the whole toast when put in, you can check the heat by throwing a prawn cracker in. Carefully put the prawn toasts in the hot oil one at a time prawn side down.

STEP 5: FINISH AND SERVE
Remove prawn toasts from oil when starting to go golden and put on kitchen paper to drain excess oil, it will keep browning up once out of the oil. Cut bread into four triangles and serve with sauce.
