Sweet Potato Brownies | Joe Wicks, The Body Coach

Joe Wicks, AKA The Body Coach is back and this week he shows you that eating well can sometimes involve chocolate with these delicious and healthy sweet potato brownies.

Serves 8; Prep Time 25 mins

INGREDIENTS:
500g Sweet potatoes,
100g dark chocolate, at least 80% cocoa, melted
30g Oats
3 tbsp whey protein
½ tsp baking powder
1 tsp cinnamon
4 Egg whites
Zest of 1/2 orange

METHOD:

STEP 1: SWEET POTATO
Peel and slice your sweet potato and cook until soft, either in the oven or in the microwave. Using a potato ricer or masher, mash up the sweet potato in a large bowl until smooth.

STEP 2: MIX AND BAKE
Preheat your oven to 180C. To the mashed sweet potato add, the oats, 90g of the dark chocolate, the whey protein, baking powder, cinnamon and the 4 egg whites. Add in the zest of half and orange and give everything a good mix together. Transfer the mixture to a greased baking dish and bake in the oven for 25-30 mins.

STEP 3: LEAVE TO COOL AND SERVE
Remove from the oven and leave to cool. Cut into squares and drizzle over the remaining melted dark chocolate.
