Seafood - Salmon With Matzo Crust

Yields: 4 servings Ingredients: 1 ½ 6-inch square matzo, broken up 2 tbsp. fresh dill ½ tsp. salt ¼ tsp. pepper 3 tbsp. olive oil 4 (4 to 5oz) skinless salmon fillets, 1-inch thick Preparation Directions: ~ Preheat oven to 450 degrees. ~ In a food processor combine matzo, dill, salt and pepper; process into coarse crumbs.
