Texas Coleslaw

Yields: 8 servings Ingredients: 1 (16oz.) bag coleslaw mix ¼ cup cilantro, chopped 1 (11oz.) can corn with red and green peppers 2 tbsp. olive oil 2 tbsp. fresh lime juice ¼ tsp. salt ½ tsp. cumin Preparation Directions: ~ In a large bowl toss together coleslaw mix, cilantro, and corn. ~ In a small bowl whisk together oil, lime juice, salt, and cumin until well mixed.
